Portogallo – Nella Gazzetta Ufficiale dell’Unione Europea L 99 del 16.04.2015 è stata registrata la denominazione Presunto de Melgaço IGP che è la numero 65 delle IGP Portoghesi e la numero 130 nel totale delle denominazioni.
Il Presunto de Melgaço IGP è un prosciutto affumicato la cui forma è ottenuta mediante un taglio lungo e allungato, tagliato/rifinito a becco o a punta, con la cotenna esterna e lo zoccolo. È commercializzato intero, affettato o in tranci. All’interno ha un’ aspetto della sezione è ben omogeneo, di colore rosso (dal rosato al rosso intenso); il colore è intenso, omogeneo e brillante. Il grasso è di colore bianco giallognolo, è brillante e presenta un tenore moderato di grasso intramuscolare. Si tratta di un prosciutto affumicato dall’aroma intenso. Il grasso presenta un aroma balsamico. È un prosciutto di consistenza moderatamente succulenta, soda e tenera, lievemente fibroso e secco, dal sapore molto intenso, leggermente acidulo, poco dolciastro nonché moderatamente salato e affumicato.
