PDO Fontina is born in the small mountain towns of the Valle d’Aosta. In these years the producers have worked on the continuous improvement of the product also with the collaboration of the public supervisory bodies and the CSQA Certification Body. It’s freezing outside. The blanket of snow that surrounds Mont Blanc is the sidereal antithesis of the still warm, steaming, liquefied fondue, a symbol of the Val d’Aosta that we enjoy in the shelter of winter: a delicacy based on PDO Fontina, cheese between the oldest in Italy and the protagonist of good local cuisine. The perfect refreshment in the perfect month after a day of skiing on the summit overlooking Courmayeur, the capital of winter tourism.
